Most of the time pasteurized milk is used, or standardized milk. Then, a starter culture of microbial bacteria is introduced into the milk; this step is commonly known as the acidification. After the acidification the liquid is mixed with rennet. The rennet makes the liquid milk coagulate which separate it in two different material types; one is whey (liquid) and the other is curd or cheese (solid). This curd is hence cut into more tiny pieces so that more water can be drained out while on heat, to get the required texture. After this, the most important steps take place which is known as Cheddaring. The curd is placed in stacks in the form of slabs, which introduces the fibrous nature of cheddar cheese. Then the cheese is milled with salt for the preservation and shaped into blocks for the aging.
