Ingredients:
- 6-8 fresh jalapeno peppers, halved and seeded
- 1 cup ACHHA Cheddar cheese
- 1/2 cup flour
- 1/2 cup cream cheese, softened
- Chicken strips (2 strips per bite)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh cilantro or chives for garnish (optional)
Instructions:
- Mix flour, red chili flakes, salt, and other spices (of preference) and marinate chicken strips.
- Cook the Chicken Strips until golden brown. Don’t overcook them to be very crispy.
- Preheat your oven to 375°F (190°C).
- Combine the Achha Cheddar Cheese, softened cream cheese, garlic powder, smoked paprika, salt, and black pepper in a mixing bowl.
- Carefully stuff each jalapeño with the cheese mixture.
- Wrap the lightly cooked chicken strips around each jalapeno.
- Place the stuffed and wrapped jalapeños on a baking sheet lined with lightly greased parchment paper.
- Bake for about 20-25 minutes until the jalapenos are tender, the cheese is completely melted and the top is golden brown.
- Remove from oven and let them cool for a few minutes before serving.
- Garnish with fresh cilantro or mint and sweet sauces.
- Serve as an appetizer.
