Ingredients

For the pizza dough

·         All-purpose Flour  2½ cups (300 g)

·         1 teaspoon sugar (powder form)

·         ½ teaspoon active dry yeast or instant yeast (11g)

·         ¾ teaspoon salt

·         7 ounces of water (warm not boiling)

·         1 tablespoon olive oil/ vegetable oil/butter

·         All-purpose flour or semolina

Pizza sauce

·         Tomato puree 1 cup

·         2-3 fresh garlic cloves (paste)

·         1 teaspoon extra virgin olive oil

·         Salt 3 pinches

·         ¼ teaspoon black pepper

Toppings

·         Basil

·         Achha Pizza cheese (cut into small pieces)

Instructions

1)    For the dough, it is better to add all the ingredients step by step and kneed in properly so that there is no white streak visible. It would be better to add the oil (olive oil or your preferred brand) after you mix and start kneading the dough. Though according to the room temperature and the humidity level of your area it is possible that the dough may lose its shape in the start so after mixing it in the bowl it is better to remove it and put it on the counter and knead it with some more flour. After it looks more stable, convert it into a greased bowl.

2)    Now put the dough to rest. The resting time should be 2 hours or 3, so that the texture after baking is soft and chewy, not hard. Make sure your bowl is covered with a plastic wrap or cloth so that an optimum temperature is stabilized inside. If you are making it in winter, then a method can be to boil a cup of water and put it in a baking oven with the covered bowl. This will ensure the yeast is given its required temperature to work.

3)    Preheat the oven at 285C.

4)    Next, make the sauce. Mix all the ingredients for the sauce. Adding olive oil will give it a very classy taste. On the other hand, chop the Achha pizza cheese into pieces and put the basil leaves aside.

5)    Now take the dough and separate it into two equal portions. It would deflate when you do so, but that is totally normal. Let it rest for a few more minutes to get the fluffy texture.

6)    Now stretch your pizza, you can stretch it with hands while sprinkling the floor or semolina. You can also shape it with rolling pin depending on the consistency.
